The best way is to try. You need to download the program from our site (http://www.heliconsoft.com/software-downloads/) and test it for 30 days in fully features trial mode.

Surely all of these would be shot with focus at infinity, meaning no there would be no benefit from stacking?

I doubt. Helicon Focus was originally designed for macro photography, but it can also be applied to other types of images.

I believe that the idea here is to build up the signal of very faint stars so that they show up more clearly by using a series of time exposures. I think there is a program apart from HF which does this, although I can't remember its name. It will also do real focus stacking. As Stas said, try the trial version.
